Girl’s Night Birthday Cooking Lesson
A great birthday treat for Erin and her 12 girlfriends. They welcomed me into her home for a private cooking lesson.
Erin wanted seasonal, fresh and easy! It was the start of the fall season and I automatically thought of squash, apples and warm seasonings!
Once the girls were trickling in and socializing, I wanted them to begin with a great starter; Zucchini Fritters with Lemon Yogurt Sauce and Spiced Apple Chutney. Then we all collaborated in making a Spiced Butternut Squash Bisque (with a touch of coconut milk for creaminess without the heavy cream feeling, plus cumin, nutmeg and cinnamon for warmth) and topped it with toasted pumpkin seeds. The second course was a quick and simple Lemon Shrimp Scampi, Chicken Piccata (Thighs and Breasts!) over creamy polenta and polenta squares … and then we made our sweet ending, Coconut Chocolate Panna Cotta topped with Salted Pumpkin Caramel.
