Mediterranean-Themed Cooking Lesson
A great idea for a birthday get together! Host Jaqi wanted to have a group of girlfriends together in her own home and have a Mediterranean-themed cooking lesson. We started off by putting together a decadent Dark Chocolate Panna Cotta, topped with Salted Caramel Almond Brittle, and then prepared the main dish — Phyllo Dough Stuffed Red Snapper with Fresh Herbs and Kalamatta Olives.
We let the snapper bake in the oven while we prepared the side dish, Toasted Bulgar infused with Spiced Tea tossed with Golden Raisins and Toasted Almonds. Then for the salad course, we roasted Tuscan Kale and tossed it with some sliced fresh fennel and a light lemon-dijon vinaigrette. We then FINALLY finished preparing the first course, Zucchini Fritters with a lemon yogurt dipping sauce.
These lovely ladies are all great cooks and were a pleasure to teach. Thank you, Jaqi, for having me in your home and letting me teach you and your great friends these fabulous dishes. Buon Appetito!
